An update on the chocolate cupcakes……involving bacon!

When Issie made choccie cupcakes last week, we saved the chopped off nobly bits from the tops and mashed it up with the leftover ganache as we were going to try to make some cake-pops with the mix.

As is often the case with these things, after scoffing down the cakes, we had no room for cake-pops so the mix just sat in the fridge until this evening.

I had a bit of a tidying fit and realised that as well as the cake chocolate goo sitting in a bowl, there was half a pack of pancetta that needed to be used.  So I baked the pancetta for half an hour on a pizza stone until it was well and truly crispy and then set aside to cool.

Then I was about to throw away the chocolate cake goo and was snacking on a bit of bacon and then all of a sudden I decided to have some chocolate goo too…….wow – it’s goooooooood.  Really, really, really goooooooood.  Try it! xx
