I’ve watched every Bake Off since the beginning. I even record it if I’m going to be out. And every year I yell at them all that if they want to avoid a soggy bottom then they need to brush the raw pastry base with egg then refrigerate it for ten minutes before putting in the filling.
My Nanny Peach made the most amazing pies. There was never a soggy bottom in site and this was her trick.
Tonight, at last, one of the bakers has done it properly. Yan, who says it’s a science thing, has egged her bases. The joy!
