As promised here is my Baharat recipe. I think this spice mix is a bit like garam masala in that there are hundreds of variations on a theme but this is the one I use when I can’t buy a premixed version.
I bung it all in a coffee grinder and give it a good whizz. I have two coffee grinders though – one only for coffee. If you are using yours for both, then you’ll need to make sure you give it a good clean – it’s not a great taste mixed in your latte!
Ingredients:
1 tablespoon black peppercorns
1 tablespoon cumin seeds
2 teaspoons coriander seeds
1 teaspoon whole cloves
½ teaspoon cardamom seeds
1½ tablespoons paprika
1 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
