Happy Thursday – except it was Wednesday…..see, told you I was poorly!

I’m actually not feeling terribly happy today – I have labyrinthitis and a cold and a sore back.  I’m feeling sorry for myself and the dog doesn’t even want to give me a cuddle because my coughing and sneezing is frightening her……she’s snuggled up under a blanket trying to ignore me!

I’m trying to be productive though so I’m watching lots of TV cookery programmes.  I have to stop this habit of moaning at the TV every time an American TV chef piles in handfuls of salt…..they are ignoring me anyway!

I’m currently watching The Pioneer Woman.  I love the huge quantities of food she cooks up.  There is something strangely comforting in it.  It’s no wonder though that the US has such an obesity issue if they’re following her recipes!  There really ought to be a few health warnings pointing out that the food she’s producing is fine if you are a cowboy using up four million calories a day but if, like me you sit on your already well padded backside watching Food Network, you should probably consider a salad.

Today’s useful bit of information for me though came from Ina Garton, the Barefoot Contessa.  If you over whisk cream (presumably not to the point where it separates and you’ve made butter!) just add a splash of unwhipped cream and stir it through and you bring it back to where you want it.  I’m tempted to whip some cream just to see if it really works.  If not, I can always make butter.

And butter makes me think of toast – toast is a superfood.  Or it should be.  I’m off to have some toast.
