My oldest and bestest friend’s mother-in-law just sent me this – she and her husband are in self-isolation right now, being in the vulnerable age and health bracket. It’s her Go To Cheat’s Risotto, for 4 or halve it for 2.
Jill sometimes makes this as a vegetarian meal with small vegetables instead of the meat. You could add a handful of peas with the tomatoes to give you some more veg in one pot.
Ingredients
1 onion, chopped
1/2 teaspoon Celery Salt
4oz (110g) mushrooms
Butter or oil
8oz (225g) Long grain rice
1pint (500ml) Chicken stock
1 bay leaf
400g tin chopped tomatoes
4oz (110g) chopped chicken or prawns, boiled ham or chopped pork
Salt & pepper to taste
Glug of Lemon juice
Method.
Fry the onion, celery salt and mushrooms in oil/butter for 5 minutes.
Add the rice and cook for a further 2 minutes.
Add the Stock and Bayleaf.
Bring to the boil and simmer for 15 minutes.
Add tomatoes and meat.
Add lemon juice if liked and seasoning
Heat through and serve.
