This came in from one of my daughter’s old school friends’ mum – unfortunately her lot had wolfed it down before she got a chance to take a proper photo!
Ingredients
One year old arborio rice ( was totally fine but you take the risk)
Onion
Garlic
Celery if you have it or celery salt if not
Chorizo/ bacon/ any old ham you have in the fridge
Dried mushrooms ( Soak)
Cream cheese that needs using up or dry old bit of parmesan cheese
Frozen peas
A leek if you have one
Stock cube
White wine ( Obviously not store cupboard)
Salt and pepper
Method
Chop up onion, garlic, celery, leak and chorizo and fry off in deep pan until slightly soft
Add rice and stir for 3 or 4 mins
Add a big slug of white wine and let alcohol burn off ( drink rest of bottle)
Make a litre of stock, veg or chicken
Add stock to rice as it gets absorbed ,once rice is to a texture you like add any cream cheese, or cream you have.
Add soaked mushrooms, any ham you have, frozen peas if you fancy
A good amount of parmesan
