One-a-penny butter pud!

It’s Good Friday so it’s Hot Cross Bun day.

I woke up this morning and eagerly put on the grill to warm up whilst I got my hot cross buns out of the cupboard only to open the packet and find to my dismay that they were stale……only bought them yesterday, hurrumph Sainsbury!

So I opened the second packet, only to find they were in a similar state.

Not to be deterred, as I had some eggs that needed to be used up I decided a little experiment was in order and here we have the result.  I’ve yet to tuck in but it smells really yummy and warming on what is turning out to be a pretty miserable, wet Easter day.

Update – just tucked in with a big blob of vanilla ice-cream on the side.  Heavenly and made up for the disappointment of not having my toasted buns for breakfast!

 

Ingredients

 

12 hot cross buns

50g butter

4 tablespoons apricot jam melted in 2 tablespoons water

1 tablespoon chopped crystalised orange peel

1 tablespoon chopped crystalised lemon peel

2 tablespoons raisins, soaked in 30 ml rum (mine says it’s spiced rum)

1 teaspoon cinnamon

1 teaspoon ground mixed spice

250 ml single cream

500 ml milk (I used whole milk as that what I had spare)

6 large eggs

4 tablespoons soft brown sugar

 

To make:

1.  Butter a lasagne tray.

2.  Slice the buns in half and butter liberally.

3.  Brush over the apricot jam and sandwich them back together again.

4.  Squash the hot cross buns into the lasagne tray sprinkling the fruit in between, together with any rum that hasn’t soaked into the raisins.

5.  Beat the eggs, cream, milk, sugar and spices together in a large bowl then pour over the buns.

6.  Cover and put to one side for a couple of hours to allow the custard to soak into the buns.

7.  Pre-heat the oven to 150C then bake the pudding for 1 hour and sit back and savour the warm smell of cinnamon and mixed spice!

      I’m using WordPress hosted by 123-reg. I don’t have any issues with either. I get lots of spam about all sorts of things but I have spam filters in place that are free plugins through WordPress and they seem to work pretty well. Thanks for your interest in my site and keep coming back!

    Aw, this was an extremely nice post. Finding the time and actual effort to make a superb article… but what can I
    say… I put things off a lot and don’t seem to get anything done.

    There was quite a lot of this left over – even with quite large portions being knocked back by all. But we discovered that warmed up briefly in the microwave with a sprinkle of caster sugar over the top and it tastes a lot like bread pudding, although not as fatty! Almost health food then!
