Supper time treats – the cheese and ham squashy grows up!

No picture on this one – there is no way to take a photo of these that looks at all elegant or even approaches showing how lovely these are and equally no way to have the time to photograph them once my daughter spies they have been made!

This is a really quick and easy hot snack for small kids and teenagers alike.  Izzy loves the junior version with a cup of hot soup, particularly if it’s tomato soup and she can dip the hot gooey triangles into the soup.  She also likes to dip them in ketchup.

This isn’t so much a recipe as an assembly suggestion – it came to be when I didn’t have any bread for a toasted sandwich so used a wrap instead.

So first off, heat up a non-stick frying pan or a panini press (which is why they were named squashies by Izzy in the first place) .

Then cover half a flour wrap with cheddar cheese and put some ham on top.  If you can get away with it, perhaps a few slices of tomato too!  Fold the other half of the wrap over and then place in the hot pan.  Cook for about 30 seconds, pressing down with a spatula (squashing!) over a high heat when the wrap will begin to brown on the lower side and flip over and dry fry on that side for a further 30-45 seconds.  Remove from the pan and cut into triangles with a pair of kitchen scissors.

The grown up version, scoffed down by Izzy this evening replaces the cheddar with garlic and herb Boursin and the ham with thinly sliced chorizo.  Assembled and cooked in the same way.

Even the fussier eaters amongst us seem to like one or the other version of these.
