White Chocolate Bark

I admit this isn’t exactly health food but at it’s core it is exactly what this is all about.  Most kids like sweets so if they’re going to eat a chocolate bar, then adding some nuts and fruit to it means they are getting a little of what they need in the treat they are happy to have!

125g large white chocolate buttons

125g chopped salted peanuts

125g chopped dried apricots

 

1.   Melt 3/4 of the chocolate in a glass bowl in the microwave, in 30 second blasts, stirring after each blast.

2.   Once the chocolate is fully melted, add the remaining buttons and stir in until that too has melted – this tempers the chocolate, cooling it.

3.  Line a baking tray with greaseproof paper and then spread the melted chocolate evenly over the paper.

4.   Sprinkle the nuts and apricots over the surface of the chocolate and pat gently to ensure it’s “glued” in.

5.   Set aside somewhere cool, or even in the fridge if you’ve room, until the chocolate is set hard.

6.  Break into shards or chop into squares with a sharp knife.
